For THE UNDYING MONSTER, it looked like they had the actor holding his mark, and footage of his makeup was superimposed over his face, which was then removed via an optical dissolve -it actually looks a lot better than it sounds!

As to DAUGHTER OF DR. JEKYLL, that was done using color filters as had been done in the March version of DR. JEKYLL AND MR. HYDE. The make-up was done with color so it wouldn't appear through the filters over the camera lens. Then, as the scene was being shot, the filters would be removed and the result is what you see in the final film, the gradual appearance of the monster make-up on a perfectly normal human face! (Black and white photography had certain advantages over color!)

Gotcha. The technique you describe for Daughter was also used in the Twilight Zone episode, "The Howling Man."

There's always Teen Wolf.

Also, I've seen the original Ginger Snaps and it's... different. It's not a straight up horror movie, the werewolfism is very clearly a metaphor, but the movie's still pretty solid. Certainly worth seeing.

I can't speak to the sequels, though.

Wallace & Gromit: The Curse of the Were-Rabbit.

Funny stuff.
